Cape Cod Sea Scallops fresh off the boat from Georges Bank, MA. Chef John Beck pairs fresh sea scallops with Ohio grown produce. The scallops are paired with Cauliflower puree, balsamic brown-butter with capers and golden raisins, and served with brussel sprouts.
Sea scallops are one of the most sustainable seafood offerings today. A good source of protein, scallops are primarily harvested off the coasts of New Jersey and Massachusetts. Areas in which they are harvested are rotated to maximize scallop yields and to protect beds of young scallops as they grow.
